California Avocado and Smoked Turkey in a Bread Shell
- ¼ Cup Dijon mustard
- 3 Cups vinaigrette
- 12 California avocados
- 1/3 Cups lemon juice
- 3 Gallons mixed lettuces
- 3 ½ quarts smoked Turkey or Chicken, cut in strips
- 3 Cups dried cherries or cranberries
- 24 (6-inch) prepared bread shells
Whisk mustard into vinaigrette; reserve.
Toss 2 cups lettuce, 1/2 cup (slightly mounded) Turkey or Chicken, and 2 tablespoons dried fruit with 2 tablespoons reserved vinaigrette. Fold in 1/2 cup avocado. Mound on top of one warmed bread shell.
