Christmas Morning Cranberry Muffins
  • Makes 9 large muffins



  1. Coarsely chop cranberries, sprinkle with ¼ cup sugar and set aside.
  2. Preheat oven to 375 °f, prepare pans.
  3. Combine flour, 2nd measure sugar, baking powder, salt, cinnamon and allspice.
  4. In another bowl combine egg, orange rind and juice and melted butter.
  5. Add dry mix to wet mix and stir to moisten.
  6. Fold in cranberry mixture and nuts.
  7. Spoon into pans and bake for 15 – 20 minutes or until golden.
