Crisp Apple-Rice Salad

  1. In a large mixing bowl, combine chilled rice, apple, celery, sunflower seeds and currants.
  2. In a small bowl, stir together vinegar, oil, honey, mustard, orange peel, garlic and salt.
  3. Drizzle over rice mixture, tossing gently to coat.
  4. Serve immediately.
  5. Or, cover and chill up to 24 hours.
