Haitian Consommé à l'Orange

  • 6 cups homemade chicken stock, clarified
  • 2 cups strained, freshly squeezed orange juice
  • 2 cloves
  • orange slices as garnish, peeled and with all white membrane removed, sliced thinly


  1. Combine clarified stock, orange juice, and cloves in a saucepan.
  2. Cover and bring to a simmer over very low heat.
  3. Simmer for 2–3 minutes.
  4. Strain into bouillon cups and garnish with orange slices.
  5. Can be served chilled.
