Heritage Beef-Rice Casserole

Makes 6 servings.



  1. Melt butter in large skillet. Add Beef chuck and cook until brown, about 10 minutes.
  2. Add Onion, cover and simmer for 20 minutes.
  3. Stir in catsup and rice.
  4. Remove from heat and blend in cottage cheese, sour cream, pickle, salt and pepper.
  5. Turn into buttered 2-quart casserole. Sprinkle with grated Cheese.
  6. Bake at 350 degrees 25 minutes.
