Serve this delicious lemon curd with Irish soda bread for a great appetizer!

  1. Extract lemon juice.
  2. Grate rind thinly.
  3. Beat eggs. Stir eggs, lemon rind, lemon juice, butter and Sugar atop a double boiler.
  4. Stir over simmering water until mixture is glossy and thick.
  5. Strain into jars and cover.
  6. Store in a fridge.
