Nutty Fruit Boats
- 2 cups fresh cherries (whole-no stems)
- 1/2 cup crushed pineapple,drained
- 1/2 cup goat Cheese
- 10 Endive leaves
- 1/2 cup raw almond slices
- Using a dinner plate as a cutting board: Dice cherries, discarding pits.
- Fold in pineapple and goat Cheese.
- Divide mixture into Endive leaves.
- Top each with almonds.
- Makes 8-10 appetizers.
