  1. Soak beans overnight.
  2. Drain.
  3. Heat the oil a in heavy casserole and add the garlic, onion, and herbs, and sauté until onions are soft.
  4. Add tomatoes and simmer until well-blended.
  5. Add beans and water to cover beans.
  6. Bring to a boil, then turn heat to low and simmer covered for 1 hour.
  7. Remove cover, add salt, and simmer 1 hour longer.
  8. Remove bay leaf.
  9. Serve with rice.
