  1. Drain excess liquid from jar of shrimp.
  2. Combine shrimp, bay leaves, dried chiles, lemon, black peppercorns, and shaoxing or vodka in a medium bowl.
  3. Pour into a glass jar, seal tightly, and leave in a cool, dark place for 100 days.
  4. Store, refrigerated, for up to three years.
