Karedok (raw vegetable salad)

Ingredients

  • cucumber
  • bean sprouts
  • cabbage, sliced very thin, and delicately
  • legumes
  • Thai basil leaf
  • eggplant

Dressing

  • red pepper
  • garlic
  • birds' eye chilli
  • greater galingale
  • peanuts
  • brackish water
  • palm sugar
  • salt
  • shrimp paste (terasi/belacan)
  • hot water
  • oncom (fermented peanuts cake)

Procedure

  1. Pound the red peppers, garlic, birds' eye chilli, greater galingale, peanuts, palm sugar, salt, and the shrimp paste.
  2. Add brackish water and hot water. Mix evenly.
  3. Put all the other ingredients in. Mix until even.
  4. Spread fried shrimp chips on top of it.id:Resep:Karedok
