Meatless Chili

Ingredients

Directions

  1. Place beans and 3 cups of water in saucepan.
  2. Bring to boil and cook 2 minutes.
  3. Do not drain.
  4. Set aside for 1 hour, then return beans to heat, adding water to cover if necessary.
  5. Simmer for 1 hour, or until beans are tender.
  6. Drain and set aside.
  7. Heat oil in a large, deep skillet or stockpot over medium-high heat.
  8. Add onion and bell pepper.
  9. Cook until onion is translucent.
  10. Add beans and remaining ingredients.
  11. Bring to a boil.
  12. Reduce heat and simmer 1½ hours, stirring occasionally.
  13. Remove bay leaf.
