Description
Makes 4 servings
Ingredients
- 1 1/3 cups cooked rice
- 1 1/3 cups skim milk
- 1 teaspoon vanilla extract
- Low-calorie sugar substitute to equal 2 tablespoons Sugar
- 1 ripe banana
- 1/4 cup whipping cream, whipped
- 2 kiwi fruit, sliced, for garnish
Procedures
- Cook rice and milk in 2-quart saucepan over medium heat until thick and creamy, 5 to 8 minutes, stirring frequently.
- Remove from heat; cool. Stir in vanilla and sugar substitute.
- Just before serving, mash banana; fold banana and whipped cream into pudding.
- Garnish with kiwi fruit slices.
