Ingredients
- 1 whole wheat chapati-unleavened vegan bread like a tortlla
- 1 tablespoon humus
- 1/2 cup cookd brown rice
- 1/2 cup cooked black beans
- 1/2 small red onion sliced
- 1/2 small tomato chopped
- 1 teaspoon olive oil
- 1 teaspoon balsamic vinegar
- few sprigs fresh cilantro
Procedures
- In a small skillet saute the tomato and Onion in the olive oil and vinegar. Only for a short time so the Onion stays just a little bit crisp. Lay out the chapati and start to layer: 1. humus - 2. rice - 3.beans - 4.onion and tomato mixture - 5.cilantro.
- Roll up and nuke for 2 minutes.
