Ingredients

Procedures

  1. Blend 1¾ tsp oil, cornstarch, sugar and salt.
  2. Add beef and toss to coat thoroughly.
  3. Let stand for 20 minutes.
  4. Heat wok until hot.
  5. Add remaining oil and heat until oil begins to smoke.
  6. Add beef and stir fry until beef is just cooked through, about 2 minutes.
  7. Remove beef with slotted spoon and discard all but 1 tbsp oil.
  8. Reheat wok and add scallions and beef.
  9. Stir fry quickly, 30 seconds.
  10. Add chicken stock and stir fry 30 seconds more.
  11. Add mango and toss mixture until the mango is warm.
  12. Serve immediately over rice.
