Description

This recipe came from an estate sale. I obtained it when I purchased the family collection from the Mclean Estate in Irving, Texas in 1982. From "Catsrecipes Y-Group"[1]

Procedures

Cake

  1. Preheat oven to 375°F.
  2. Grease and lightly flour tube pan.
  3. Sift flour before measuring.
  4. Measure dry ingredients into sifter.
  5. Stir shortening in bowl just to soften then sift in dry ingredients then add milk and flavoring and mix until all flour is dampened.
  6. Beat for about 2 minutes at low speed then add eggs and yolk and beat 1 minute longer at low speed scraping down sides of bowl often.
  7. Turn batter into pan then bake at 375°F for 1 hour until done.
  8. Cool cake in pan for 15 minutes then loosen from sides of pain with spatula and turn right side up on rack to cool before frosting.

Festive frosting

  1. Combine egg whites, sugar, water and corn syrup in top of double boiler beating with a whisk until thoroughly mixed then place over rapidly boiling water beating constantly with whisk and cook 7 minutes.
  2. Remove from boiling water then add flavoring and beat until thick enough to spread.
