Ginger Dressing

• This recipe yields about 1 cup of vinaigrette.

Ingredients

• ⅔-cup sugar
• 2 tablespoons flour
• 2 eggs, beaten
• 2 tablespoons salad oil
• 3 tablespoons lemon juice
• 4 tablespoons orange juice
• 1 cup pineapple juice
• ½ cup whipped heavy cream
• 3 teaspoons chopped crystallized ginger

Directions

1. Combine sugar and flour in top of double boiler; add remaining ingredients except cream and cook until thickened, stirring constantly.
2. When cool fold in whipped cream and ginger.
