Authentic Salsa
2 or 3 Serrano chiles, or 1 jalapeno chile 1 to 2 cups fresh cilantro leaves 1/2 onion, coarsely chopped 1 can diced tomatoes (16 oz) 2 garlic cloves 1 t. cumin 1/2 onion, cut into wedges 1/2 to 1 cup fresh cilantro leaves 1 fresh tomato, coarsely chopped 1 T. salt Lemon juice to taste
Combine the Serrano chiles, 1 to 2 cups cilantro, coarsely chopped onion, undrained tomatoes, garlic and cumin in a blender. Pulse until blended and pour into a bowl. Combine the onion wedges,1/2 to 1 cup cilantro, fresh tomato, salt and lemon juice in the blender. Pulse until chunky; The mixture should be of a coarser consistency than the Serrano chile mixture. Stir into the Serrano chile mixture and serve with tortilla chips. Made with fresh ingredients, this flavorful salsa is quick and easy to prepare. The abundance of cilantro gives it a true authentic flavor. The salsa may become spicier if allow to stand overnight or longer. Add a taste of lemon juice to lessen the heat.
