Description

I obtained this recipe from an estate sale when I purchased the family collection from the Sullivan Estate in Dallas, Texas in 1988. From "Catsrecipes Y-Group"[1]

Ingredients

Marinade

Sauce

Procedures

  1. Cut beef into matchstick strips cutting along the grain.
  2. Peel and grate ginger then squeeze out juice.
  3. Mix four marinade ingredients.
  4. Add to beef and marinate 30 minutes.
  5. Cut carrots, celery and pepper into thin strips.
  6. Mince garlic.
  7. For ginger use the leftover minced ginger from the preparation of ginger juice.
  8. Mix sauce ingredients and set aside.
  9. Beat egg white and add water then add flour and cornstarch.
  10. Mix batter thoroughly and drop into marinated meat.
  11. Heat wok.
  12. When heated add 5 cups oil.
  13. When oil is ready add about ¼ of the meat batter mixture.
  14. Deep fry beef until golden brown.
  15. Remove and set aside.
  16. Let oil come back to original temperature and add more meat.
  17. When meat is cooked clean the wok.
  18. Heat and add 1 tablespoon oil.
  19. When oil is ready add vegetables and begin stir frying.
  20. Pour in the sauce and let come to a boil.
  21. Add the deep fried beef then toss quickly and remove.
  22. Sprinkle with sesame oil and serve hot.
