Description

Makes 6 servings.

Ingredients

Procedures

  1. Cook onion, peppers and garlic in butter in large saucepan until tender but not brown.
  2. Stir in tomatoes, broth, poultry seasoning, salt and red pepper. Cook, covered, over medium heat 10 minutes.
  3. Add okra and cook 10 minutes longer; add chicken.
  4. Blend ¼ cup water and flour; add a little hot tomato sauce from skillet to flour mixture.
  5. Stir flour mixture into skillet. Cook, stirring constantly, until thickened, 3 to 4 minutes.
  6. Serve over fluffy rice.
