Description

Chicken Piccata [1] [2] is a light flavourful dinner.


Ingredients

  • 1/4 cup olive oil
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 1 pound thinly sliced boneless, skinless chicken breasts
  • 5 tbsp butter
  • 1/2 tsp minced garlic
  • 1 cup chicken broth
  • 1 3.5 oz jar capers, rinsed and drained
  • 1 tbsp fresh lemon juice
  • 1 1/2 tsp white wine vinegar
  • 2 tbsp chopped fresh parsley

Procedures

  1. Warm olive oil over medium heat.
  2. Take and beat eggs, set aside.
  3. Combine flour and Parmesan cheese.
  4. Take chicken pieces, first douse in eggs, then in the flour mixture.
  5. Include 2 tbsp of butter in warmed olive oil pan.
  6. Place floured chicken into pan to cook for ~4 min on each side, achieveing a golden brown colour.
