Ingredients

Procedures

  1. Place beans in large heavy kettle; add 2 quarts water.
  2. Bring to a boil; cook for 2 minutes.
  3. Cover; let stand overnight.
  4. Bring to a boil again; reduce heat.
  5. Simmer, covered, for 40 minutes.
  6. Drain beans, reserving 2 cups liquid.
  7. Render salt pork in skillet.
  8. Sauté onions and garlic in pork fat; stir mixture into beans.
  9. Add mustard, Worcestershire sauce, salt, chili powder, brown sugar and vinegar; stir in reserved liquid.
  10. Turn into greased baking dish.
  11. Bake at 350°F for 35 to 40 minutes.
