Description
Fresh meat stew. Both north and south in Zambia, this would be served with cornmeal mush, called Nshima. Both in the north and south of Zambia, this would be served with cornmeal mush, called Nshima.
- Serves 4 - 6.
Ingredients
- 1½ pounds beef, cut in cubes
- 2 cups water
- 3 onions, sliced
- 1 tomato, peeled and sliced
- ¼ to ½ cup peanut oil
- 2 chile peppers or ½ - 1 tablespoon crushed red pepper
Directions
- In a heavy stewing pan, combine meat, water, and onions.
- Simmer 30 minutes.
- Add tomato, oil, and chile peppers.
- Continue simmering until meat is tender, 30 to 45 minutes more.
Variations
- This same stew may be made with chicken, lamb, or .
- Eliminate the chilli pepper for a southern Zambian version.
