  1. Grease baking tins or pyrex dishes.
  2. Preheat oven to 450 °F /225 °C.
  3. Wash, peel and grate potatoes.
  4. Grate coconut.
  5. Add four cups, squeeze to extract milk or use evaporated milk.
  6. Put grated potato into large bowl.
  7. Add sugar, vanilla, nutmeg, raisin and ginger.
  8. Mix well.
  9. Add milk and margarine.
  10. Mix well.
  11. Put in baking dishes/pans.
  12. Put on bottom shelf of oven after 30–45 minutes, then remove to top shelf, lower oven to 350 °F.
  13. Cook until brown or a knife inserted comes out clean.
  14. About 75–90 minutes.
