Beet Soup - Serves 6

Beet Soup - Rødbedsuppe

Ingredients

Directions

  1. Wash the beets and scrape but do not peel them.
  2. Cut beets into small chunks.
  3. Place in a kettle with the remaining ingredients, except to sour cream.
  4. Cover with water, put a lid on the kettle and simmer 2½ hours over low heat.
  5. Strain through a sieve or colander.
  6. Serve cold with a topping of sour cream.
