Description
A tasty and filling in-between meals recipe.
Ingredients
- 300 g (or 2 cups) rice flour
- 600 ml (or 2 cups) cold water
- 1 teaspoon salt
- 1/4 teaspoon baking soda
- 1 teaspoon ginger, chopped
- 2 tablespoons peanut oil
- 100 g (or 1/2 cup) cowpeas or garden Peas
- 3 spring onions
Directions
In a bowl, combine the rice flour, water, salt, baking soda and ginger to make rice paste. Over medium heat, lightly brush a frying pan with oil. Pour 1/4 cup of the paste into the pan, spreading it over the surface of the pan. Sprinkle cowpeas and spring Onion and cook for 3 minutes or until the underside is crisp. Then turn it over and cook for one more minute. Repeat for the remaining rice paste.
