Ingredients
- 2 cups flour
- ½ cup butter or margarine
- ¼ cup brown sugar
- 3 eggs, well beaten
- 2 cup brown sugar
- ½ tsp salt
- 1 cup coconut, finely shredded
- ½ cup raisins
- 1 cup walnuts, optional
- 2 tbsp lemon juice
- 1 tsp grated lemon rind
Procedures
- Heat oven to 350°F.
- Mix flour, butter and ¼ cup Sugar thoroughly.
- Press firmly into bottom of lightly greased oblong pan 13"x 9½".
- Bake 10 minutes.
- Mix eggs, 2 cups Sugar and salt together.
- Stir in rest of ingredients, spread over the partially baked bottom layer.
- Bake about 25 minutes. Top will be lightly brown.
