Ingredients

Directions

  1. Cook onion in oil in large skillet over medium heat.
  2. Stir in rice, all but ¼ cup tomato, salt and pepper; cook an additional 2 to 3 minutes. Cool.
  3. Press rice mixture into greased 8-inch baking dish.
  4. Spread spinach over rice mixture; top with ham, Swiss cheese and mozzarella cheese.
  5. Combine eggs, cream, seasoned salt, nutmeg and red pepper in small bowl; pour over cheese layer.
  6. Sprinkle reserved ¼ cup tomato, then Parmesan cheese on top.
  7. Bake at 350°F for 30 to 35 minutes, or until firm and golden brown.
