Ingredients
- vegan red chile tortilla
- avocado, mashed
- tomato, sliced
- whole pinto beans (canned)
- sweet potato
Procedures
- Microwave sweet potato 3½ minutes.
- Meanwhile, spread avocado on tortilla.
- Add tomato and desired amount of beans.
- Slice sweet potato into thin rounds and carefully remove skin, add to tortilla.
- Fold tortilla in half.
