Description
A nice piece of work this soup is; Veggies & herbs makes this canadian soup one of the best soups to create and taste ! Requires basic cooking skills.
Ingredients
- 4 qt water
- ¾ cup celery, chopped
- ¾ cup onion, chopped
- 2 garlic cloves, chopped
- 1 cup carrots, sliced
- 2 cups potatoes, diced
- 2 tbsp canola oil
- ½ cup tomato paste
- ½ cup green pepper, diced
- 1 cup Mixed vegetables (soup mix)
- ½ tbsp sweet basil
- salt and pepper to taste
- ½ cup macaroni
- ½ cup pot barley
- 2 cups chicken, beef, ham (leftovers)
- 2 cups coarsely chopped cabbage
- 1 tomato, chopped
Procedures
- In a soup pot sauté the celery, onion and garlic in oil for 5 minutes.
- Add water, vegetables, pot barley, meats, seasonings. Bring to the boil and simmer for 1¼ hours.
- For last ¼ hour add cabbage and macaroni.
