Pasta Salad Dressing

Ingredients

• 1 cup extra-virgin olive oil
• ¼ cup fresh lemon juice
• ¼ cup fresh lime juice
• ¼ cup red wine vinegar (good-quality burgundy, if possible)
• 5 large cloves garlic, peeled
• 2 tablespoons capers
• 2 tablespoons caper juice from the jar
• ¼ teaspoon whole black peppercorns
• salt, to taste

Directions

1. Combine all the ingredients in a blender and puree until creamy.
