Provolone cheese is a cow's milk cheese from southren Italy. Provlone, like mozzarella, is a plasic curd cheese. The curd is mixed with heated whey and kneaded into a smooth semi soft consistency.
The cheese comes in two types; mild and delicately flavored dolce and longer aged sharper piccante. It is often smoked to impart a light flavor.
