Homemade Instant Pudding

Description
This is a home-made replacement for the instant pistachio pudding mixes found in a number of North American recipes. You must use modified cornstarch in this recipe as this is cornstarch that's already been heated to activate it. As a result you do not need to heat to make it thicken (this way it can be used in cake recipes etc).
Ingredients
- 100 g castor sugar
- 45 g Instant Clear Jel (modified cornstarch)
- ¼ tsp salt
For Pistachio add
- 60 g ground pistachio nuts
For Coconut add
- 60 g ground coconut
For Buttersctoch use
- brown sugar instead of white
For Chocolate add
- 60 g drinking chocolate
