Description

This is a home-made replacement for the instant pistachio pudding mixes found in a number of North American recipes. You must use modified cornstarch in this recipe as this is cornstarch that's already been heated to activate it. As a result you do not need to heat to make it thicken (this way it can be used in cake recipes etc).

Ingredients

• 100 g castor sugar
• 45 g Instant Clear Jel (modified cornstarch)
• ¼ tsp salt

For Pistachio add

• 60 g ground pistachio nuts

For Coconut add

• 60 g ground coconut

For Buttersctoch use

• brown sugar instead of white

For Chocolate add

• 60 g drinking chocolate
