Quick Cereal Candy

Ingredients

• 1/2 cup unrefined brown sugar
• 1/3 cup corn syrup
• 1 tsp vanilla extract
• 3/4 cup Peanut butter
• 3 cups vegan cereal flakes
• 1 cup shredded, unsweetened coconut

Directions

• Combine the brown sugar and corn syrup in a large pot and heat until boiling. Stir in the vanilla and Peanut butter until smooth. Remove from heat. Add the cereal flakes and coconut, if desired, and stir until thoroughly mixed. Pour onto wax paper or a lightly oil cookie sheet and let cool completely. Break into pieces, and enjoy.
