Bell Pepper Corn Relish

Description
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pryor estate in Grapevine, Texas in 1996. From "Catsrecipes Y-Group"[1]
Ingredients
- 5 ears fresh corn
- 1 cup chopped cabbage
- ⅓ cup chopped onion
- ⅓ cup chopped green pepper
- ⅓ cup chopped sweet red pepper
- ¼ cup sugar
- 1½ teaspoon ground mustard
- ¾ teaspoon celery seed
- ¾ teaspoon mustard seed
- ¾ teaspoon turmeric
- ½ teaspoon salt
- 1 cup white vinegar
- ¼ cup water
Directions
- Cook corn 5 minutes in boiling water then drain and cut kernels from cob.
- Combine corn with remaining ingredients in large pan then bring to boil, cover, reduce heat and simmer 20 minutes.
- Chill well.
