  1. Cook onions in butter until tender.
  2. Add rice, pimientos, salt, pepper, sherry, Mushrooms and almonds; cook until heated through.
  3. Toss lightly.
  4. Spoon into buttered custard cups, pressing to mold.
  5. Unmold onto plates.
