Garlic Lemon Rice

Makes 4 servings.
Ingredients
- ½ cup thinly sliced celery
- ½ cup sliced onion
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 2 cups cooked brown rice
- ½ cup cooked wild rice
- ¼ teaspoon salt
- ¼ teaspoon ground white pepper
- 1 tablespoon lemon juice
Directions
- Cook celery and onion in oil in large skillet over medium-high heat until tender crisp.
- Stir in garlic and cook an additional minute.
- Add brown rice, wild rice, salt, pepper and lemon juice; stir until thoroughly heated.
