Brown Rice Olive Salad

Ingredients
- 2 cups cooked brown rice (cooked in chicken broth), cooled to room temperature
- ½ cup sliced celery
- ½ cup sliced ripe olives
- ¼ cup finely diced onion
- ¼ cup finely diced red pepper
- ¼ cup bottled Italian salad dressing
- lettuce leaves
Procedures
- Combine rice, celery, , onion and red pepper in large bowl.
- Pour salad dressing over rice mixture; toss lightly.
- Serve on lettuce leaves.
