Apricot Walnut Dressing

Ingredients

• ½ cup apricot nectar or other natural fruit purée
• 3 tablespoons walnut or hazelnut oil
• 1 tablespoon Pommerey-style mustard with the seeds
• 2 tablespoons boiling water

Procedures

1. Place the apricot nectar, oil, and mustard in a blender or mini food processor.
2. Blend at high speed for 10 seconds.
3. Season, add the boiling water then blend to emulsify the dressing==References==
