Description
Ingredients
3 tablespoon
corn oil
2
onions
, finely chopped
1 sweet red pepper, seeded and chopped
1 lb.
potatoes
, peeled and cut into ½-inch cubes
2 tablespoons flat-leafed
parsley
, chopped
6 cups
beef stock
salt
, freshly ground
pepper
Directions
Heat the
oil
in a saucepan, and add the
Onion
. Sauté until it is lightly golden.
Add the sweet red pepper and the
potatoes
, stir to mix and cook for 2–3 minutes.
Add the
parsley
, pour in the stock and simmer for 30 minutes. Season to taste with
salt
and
pepper
.
