Mochi

About mochi

Short-grained, glutinous rice used to make rice cakes. It has a sweet flavor and is high in starch. The rice is put in large tubs and pounded until it becomes very sticky and is then formed into balls or squares. Mochi is also used in making rice dishes, confections and rice flour, called mochiko.
