Asparagus Stir-fry

Ingredients
2 tbsp
oil
2 bunches
asparagus
, cut into generous bite sized lengths
5 small
courgettes
, in chunky slices
1 cup adzuki or crunchy combo
sprouts
Procedures
The sprouts in this wonderfully easy stir-fry give it a lovely nutty flavour and texture! use flavoured
oil
if you like.
Heat the
oil
in a non-stick pan, or wok.
Sauté the
asparagus
and courgettes for 3–4 minutes or until barely tender, toss in the sprouts just before serving.
