Fresh Tomato Pepper Soup
Ingredients
- 6 medium sized tomatoes or about 2 pound Italian plum tomatoes
- 1 Onion, chopped
- 1 stalk celery, chopped
- 2 cups broth or water
- 1 tablespoon tomato paste
- 1/2 teaspoon dried basil
- 1/4 teaspoon freshly ground pepper
- 1/2 teaspoon salt
Procedures
Cut tomatoes into thin wedges and place in 1 1/2 quart saucepan with all ingredients. Simmer uncovered for 30 minutes. Strain to remove tomato skins and seeds. Adjust seasonings. Serves 4-6
