Middle Eastern Tuna Salad

- Yield: 4 servings (about 3½ ounces tuna)

Ingredients
- 2 (7 oz) cans water-packed tuna, drained
- 1 large cucumber, peeled and diced
- 1 small red onion, diced
- 3 medium tomatoes, seeded and diced
- ½ cup cooked canned chickpeas
- 1 tbsp olive oil
- 2 tbsp fresh lemon juice
- ½ tsp ground cumin
- ¼ tsp ground red pepper
- 2 tsp toasted sesame seeds
Procedures
- In a large salad bowl, combine all ingredients.
- Cover and chill for ½ hour.
