Fat-free Pumpkin Raisin Cake

Makes 1 cake and about ½ cup sauce.



  1. Spray 9-inch square baking pan with cooking spray.
  2. In large bowl combine dry ingredients; stir until smooth.
  3. Pour into prepared pan.
  4. Bake in 350 °F oven 35 minutes or until toothpick inserted in center comes out clean.
  5. Cool in pan on wire rack.
  6. If desired, serve with fat-free yogurt cream sauce.

Fat-free yogurt cream sauce

  1. Line a strainer with paper coffee filter or cheesecloth layers.
  2. Add yogurt, set over bowl and refrigerate 4 hours.
  3. Discard drained liquid.
  4. Combine thickened yogurt and sifted confectioners' sugar; stir until smooth.
