Finnish Leaf Lettuce Salad

Serves: 6 to 8


  • 2 quarts butter lettuce or other salad greens
  • 1/4 cup lemon juice, freshly squeezed preferred
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • dash white pepper
  • 1/4 cup heavy cream


1.Gently wash and dry leaf lettuce. This is a tender lettuce.

2.Tear lettuce into bite-size pieces.

3.Place in refrigerator to chill.

4.Whisk together lemon juice, sugar, salt and pepper.

5.Whisk in heavy cream, a bit at a time, until creamy.

6.Drizzle over lettuce leaves.

7.Toss gently.

8.Serve immediately.

10.Serves 6 to 8.

12.Note: This salad sings spring and tastes so good after eating winter veggies.
