Portuguese-style Rice

  1. Sauté diced sausage in a heavy saucepan until browned, about 5 minutes.
  2. Drain off excess fat.
  3. Add rice, stirring well to coat grains.
  4. Add water and salt, and bring a boil.
  5. Lower heat, cover pan, and simmer for 19 minutes, or until grains are soft and water has evaporated.
  6. Stir in cilantro.
