Potato Salad Australian-style

  • Serves: 6 – 8



  1. Boil potatoes
  2. Turn off heat, pour off water and fill pot with cold water.
  3. Leave until potatoes are cool.
  4. Lift from water and peel off outer skin.
  5. Chop potatoes into even sized cubes and place into a bowl with onion, parsley and coriander.
  6. Mix together mustard and mayonnaise.
  7. Add to potatoes with chopped eggs, and mix.
  8. Refrigerate until served.
