Tuna and White Bean Salad I

  • 3 cups or 24 (2 tbsp salad and 7 crackers) servings

Ingredients

Procedures

  1. Drain beans well.
  2. Place ½ the beans in a bowl.
  3. Mash remaining beans with fork.
  4. Combine mashed and whole beans with tuna, onion, rosemary and arugula.
  5. Dress salad with lemon juice, olive oil, salt and pepper.
  6. Serve with crackers.
