Avocado Salad a la Laguna Beach
This is my version of avocado salad. Since my family likes highly seasoned foods I came up with this idea so that guest could have their salad to their own liking.
- 3 avocados
- 1 Cup pineapple cubes
- 1 Cup grapes, cut in halve
- 2 oranges, peeled and cut into pieces
- 1/3 Cups french dressing
- lettuce leaves
- Fresh mint for garnish
Cut avocados into halves lengthwise and scoop out pulp and dice.
Combine in a bowl avocado, pineapple, grapes, oranges and french dressing.
Marinate for 20 minutes.
Fill avocado shells with mixture and place on place on a plate on lettuce leaf.
Garnish with mint leaves
